Here's a quick, throw-together-fast meal: Lamb Chops
Marinate for at least 1 hour, then grill to desired doneness -- anywhere from 3-5 minutes per side. Zuchinni-Onion Marmalade
Heat olive oil. When the oil is smoking, add the onions. Cook the onions until slightly wilted, then add the Zuchinni, then salt and pepper. Cook the vegetables until soft, melty and caramelized. Sauce
Mix the above together, adjusting as necessary. I like mine a little tangier than usual ... Serve the chops and marmalade over some nice fluffy couscous, accompanied by the mint-vinegar sauce.
